I'm not into meat much, but everybody else in my family loves this when I cook it.
- 1lb hot pork sausage (cooked, chopped into small bits, drained of all the fat you can squeeze out of it)
- 3 16oz cans undrained blackeyed peas (not the kind already mixed with rice)
- 1 16oz can diced tomatoes
- 1 to 2 tsp Louisana pepper sauce (Tabasco or similar)
- 1/2 cup finely diced celery
- 2 tsp light soy sauce
- 1/2 tsp black pepper
- salt to taste (1/2 to 1 tsp)
Cook sausage and drain. Combine everything into large skillet and simmer uncovered for 15-20 minutes. Stir thoroughly every few minutes with spatula. Simmer until liquid cooks down some and celery is done. Server over steamed jasmine rice.
