In need of an easy Potato Salad Recipe

I do cooking projects with my class and from the beginning of the year one of my students has been begging for me to make potato salad and lemonade. The lemonade part will be easy since after talking to her brother I have determined the lemonade she wants is Country Time, but I have never made potato salad! Since my students are all labeled severely handicapped I am looking for an easy potato salad recipe. I usually give each a small job that they can assist with and we make the food as a team. Also the less ingredients the better since we go to the store and buy the ingredients and I am low on class funds. Thanks in advance for your help everyone!

 How large is your class?  I don't remember off hand how much this recipe yields.

  • 6lbs. small red (new) potatoes
  • 2 small bunches green onions
  • 2 tablespoons celery seed
  • 10 hard boiled eggs
  • 2 cups Helmann's mayo (or more to taste)
  • salt & pepper to taste  (start with ½ teaspoon salt & ¼ teaspoon pepper, then gradually add more as desired)

Rinse potatoes well & DO NOT PEEL.  Boil potatoes with skins on just until they are tender (do NOT overcook).  Remove from hot water & place on paper towels until cool.  Cut cooled potatoes into eighths and place in large mixing bowl.  Thoroughly rinse green onions and cut into ½-inch pieces.  (I use about 4-6 inches on the bulb end & save some of the green for garnish.)  Peel hard boiled eggs, cut into eighths, and add to potatoes.  Add celery seed, salt & pepper.  Mix in mayo until potatoes & eggs are coated ,and all ingredients are thoroughly mixed.

This potato salad is best when eaten immediately, but will keep nicely in the fridge for several days.

Wow, it took me like a million years to get in here to reply.  *sigh*

Anyways, my mother taught me the easiest potato salad recipe cause I was her pickiest eater growing up :p

I can't give you measurements because you have a class size.  We can figure that out later if it sounds good to you. Here are the basics.

Your grocery list would be: 

  • Potatoes
  • Pickles
  • Mayonaise
  • Celery
  • Olives
  • Eggs

And spices and flavors you can choose from:

  • Pepper
  • Paprika
  • Mustard

Basically you'll be boiling potatoes, chopping and mixing :) If you need less ingredients you can take away the olives. If you need less spices just keep the pepper. Let me know what you think, we'll talk measuring and water and all that stuff.  Just don't tell my mother we measured, she'll yell at us :o

It's so cute. I finally put it on our calender to make and she is so excited. I am going to print out both your and zeev's recipes because both look great, and let my assistants decide which one we'll make. I'll let you know how it went Thursday.

Let me know if you need any tips on time, boiling, or how to check for "doneness" with the potatoes.

Well Cupcake, we used your recipe (minus the olives because I forgot to buy them) and it got an A+. Some of the students asked for seconds. It was a fun project and was a yummy treat.

The potato salad recipe on the side of the Hellman's Mayonnaise jar is EXCELLENT, and very easy.

Boil potatoes with skin on. ( I like Yukon Gold, but any will do just fine)
Once cooled, skin them.
Hard boil some eggs. (Maybe 1 egg to every 3 potatoes or more if you love em.)
finely chopped celery
Here are the optional additions:
finely minced yellow onions,or
finely "snipped" chives or scallions, small slices
mayo (the good stuff)
dijon mustard
some salt...
big bowl
garnish with paprika/ chive stalks

REALLY good!!!
