Easy Turkey Casserole

Here is a really quick recipe I use for Thanksgiving Day leftover turkey. It is pretty simple and fast for me to make with my busy schedule. And it's all in one pan.

 

  • 1 package spaghetti (break noodles in half before immersing in water)
  • 1 large or 2 small cans Cream of Chicken Soup
  • 1 two or three inch slice of Velvetta or 6 slices American Cheese Slices (whatever you have on hand)
  • 1 tbsp. butter
  • 1 cup of milk
  • 1 cup of leftover corn or peas
  • 2 or 3 cups chopped leftover turkey/chicken

Salt and pepper to taste.

Cook the spaghetti as directed and drain. Add the cream of chicken soup, butter, cheese and milk to the drained spaghetti and stir. Add the vegetables and the turkey, stir. Reheat till everything is melted and mixed. Add salt and pepper to taste.

You can add onions and garlic to this if you like. Sometimes, if I don't have leftover vegetables, I'll use whatever I have on hand, like creamed corn or frozen vegetables. If you like more cheese, add more. Want a creamier consistency, add more milk.
