English Muffin style bread for the bread machine

Yummy!!! Complete with "nooks and crannies"

NOTE: I'm posting the 1lb recipe, because most people have 1 1/2 lb capacity bread machines, and due to the rise of this bread, you need to make the loaf 1/2 lb less than the machine can handle. If anybody wants the 1 1/2 converted recipe, for use in a 2 lb capacity machine, contact me.

1 cup warm water
1 tsp. salt
3 tbsp. Nonfat dry milk
2 tbsp. sugar
1/4 tsp. baking soda
2 1/2 cups bread flour
1 tbsp. gluten
1 3/4 tsp. bread machine yeast

Set to your basic white bread cycle, normal or medium crust setting, if your machine offers it.

Check the dough consistency after about 5 minutes of mixing. If the ball of dough is sticking to the sides of the pan, sprinkle in more bread flour, a tsp. at a time, until it stops sticking, but don't let the dough get crumbly.
