IPhone Messages stored in ICloud - are they still stored when not signed into iCloud?

Hoping this post is anonymous however my messages somehow got into my work server and was hoping that all messages sent without being signed into iCloud would therefore guarantee it's ability to be unread since (hopefully) they are not stored once you are not signed into iCloud.

I dont really fully understand your question because.. It doesnt really make any sense, but I am able to gather that you are asking something about whether or not "messages" are sent.. or unreadable.. or somethig while not signed into icloud. I will try to break down how it works.
I assume you are referring to txt/iMessages sent using the iOS Messages app. There are two types of messages and each work differently:
IMessages: iMessages are text-like messages sent between iphones. IMessages require connectivity to the iCloud service so if you arent signed into icloud, an iMessage can't be sent.
BUT
Usually, upon failure of sending an iMessage, your iphone will fall-back and try to send that message as a regular TXT message. Whether or not this happens depends on your settings and whether or not you used the phone number when sending, or if the recipient's phone number is in your contacts.

So, the answer to your question (which I still dont really understand) is a firm: It depends.

I dont understand the question either. What kind of "work server" is it? Is the iphone owned by your employer?
