In order to save money with the kids, I make a double/triple batch of my favorite cookies and freeze them as individual batter ball serving sizes. The freezing process is pretty quick and easy. Take scoops of cookie batter. Place the batter balls on cake pans and freeze them. The batter is usually solid in about two hours. After that, transfer all the cookie batter balls into a freezer bag and put back into the freezer. When I need fresh baked cookies I pull out the amount desired of  batter balls and bake them at the prescribed temperature. I don't even bother thawing them. I just tack on a few extra minutes and they turn out perfect every time. This method has been helpful for unexpected company, potlucks, after school snacks and when my family has a sweet tooth. I have homemade goodies on hand without a lot of prep time.
